Bacon and Egg Breakfast Muffin Cups

My family always looks forward to weekend breakfast.  
Who doesn't love eggs and bacon?  
A favorite in our house is my 
Bacon and Egg Breakfast Muffin Cups.

1 slice of bread per muffin cup
1 slice of bacon per muffin cup
1 egg per muffin cup
1 tablespoon shredded cheddar cheese per muffin cup (optional)
Spinach (optional)
Salt and pepper to taste

Preheat oven to 375 degrees.
Use a large glass to cut circles out of each piece of bread.
Grease a muffin tin and press circles of bread in the muffin cups. 
I add raw spinach leaves to mine & husbands. Spinach is optional.
Cook bacon in a skillet until halfway cooked (approximately 3-4 minutes).
Wrap 1 slice of bacon into the muffin...onto of the bread.
Crack an egg into each muffin cup (on top of the bacon).
Add salt & pepper to taste.
Sprinkle cheddar cheese over each egg.
Place in the oven and bake for 15-20 minutes or until the eggs are set. 
NOTE: if you like your eggs runny, you will need only to cook for 15 to 17 mins. 
NOTE:  you can make this entire recipe the night before and place in refrigerator.  
Come morning...pop in your oven!

I use a large cup to cut out my bread circles.

Place the cut out bread circles in to greased muffin tray.

Time to add the optional spinach.

Time to add the partially cooked bacon.

Added the raw egg, salt, pepper and cheese....ready for the oven.

Your family will LOVE these!  Delicious!!!


Somebody Pinch Me...I Get to Design Custom Jewelry for the Faithful Followers of Elevation Church

I have the world’s best job.  I get to work with people from all corners of the earth, designing custom, hand stamped jewelry - each piece is as unique as the people (and their stories) 
I am so privileged to get to know. 

Everyone has a story.  And whether it’s a happy or a sad one, people come to me with the magical memories they cherish, want to hold close or share with the world.  I love bringing those memories to life for them with a piece of jewelry that can only be worn by the client it was so carefully created for.  

If you look at most of my designs, you will see that I am saturated in His holy word daily... if you prowl around my website, my Facebook page, my Twitter account or my Instagram will see that the foundation of my life and business is based on my faith.    Most of my designs are centered around a Savior who never fails us.  When I started this business I gave God all the glory and still do.  He has blessed me with a vision to create and I love giving Him the credit for what I do.  He has taken my business to levels that only He could do.   

I can’t talk about my business without telling you about my church in Charlotte, NC.  Elevation Church has been so good to me.  I’ve been blessed to work with them on countless projects.   One of my most memorable was designing and making 5,000 Mother's Day charms for all the mothers at Elevation.  I’m always designing special gifts for the staff, the interns, The Generation group, eGroups, VIP Leaders, Worship Leaders, Volunteer Teams, etc... and of course for the ever so faithful 10,000+ members we call "Elevators".  I feel like a "rock star" when I'm out running errands and I see people I've never met wearing my Elevation jewelry designs.  I can honestly say that there is rarely a day that goes by that I don't get numerous online orders from "Elevators" requesting me to design custom pieces of jewelry for them so they can tell their story, express their love for our Savior or their love for Elevation Church, a church which exists 
“so that people far from God will be raised to life in Christ”.

Thank you, Pastor Steven and Holly Furtick, founders of Elevation, for your love for Christ and obedience to Him  to do what you were called to do.

Healthy Baked Zucchini Chips

My biggest weakness is chips of ANY kind.  I will always pass over the "sweets" for yummy chips.  These days I am trying really hard to make healthy choices in my diet; therefore, I came up with this idea to make chips from Zucchini.  I just gathered a few items from my pantry that I thought would make the zucchini taste great.  
They turned out amazing...I have a new favorite snack! 
My family ate them ALL in 10 minutes!
They were delicious!

Baked Zucchini Chips

1 zucchini, sliced 
1 cup of milk
1/4 cup Italian bread crumbs
3 tablespoons parmesan cheese
1/4 teaspoon salt + pepper

Preheat the oven to 425 degrees. 
Pour the milk in one small bowl place the sliced zucchini in the milk.
Combine all the other ingredients on a plate.  Take the zucchini slices one by one and "roll" them in the crumb mixture. Place the coated zucchini on a wire rack coated with cooking spray on top of a cookie sheet, and bake for 30 minutes. 

These were to die for!!
